What you’ll need
1 Full Chicken cut into pieces
1ltr Lacto
500g Flour
1 tsp Baking powder
4tblsp coriander powder
4tblsp curry powder
2tblsp garlic powder
1tblsp Italian herb mix
2tblsp salt
Herb seasoning mix
Mix the herbs and spices and salt together and separate into 3 batches. Mix flour and baking powder and Separate flour into 3 equal batches.
Place chicken pieces in a bowl and pour lacto over making sure to evenly coat the chicken. Allow to rest for 2 hours.
In a plate place a third of the flour in a tray and mix with a third of the herb mixture. Take the chicken from the lacto and season with a third of the seasoning mixture. Coat in the flour mixture and let it he pieces sit on a tray for 1hr.
Take the chicken and coat in the lacto and back into the flour mixture a second time. Allow to rest.
Heat the cooking oil. Mix remaining flour with remaining herb mixture and dust the chicken pieces. Dust off excess flour and deep fry for 10 min each side.
